This is not a "light, fruity red," but rather a traditional, old-school Kakhetian Saperavi, made as closely as possible to historical Georgian winemaking. The qvevri imparts additional depth, tannins, and character. Stylistically, it's closer to a good young Mukuzani or even some natural wines from Tuscany than to the mass-produced fruity Saperavi.
Alcohol: 13%
Grapes: Saperavi
Production method: Traditional fermentation and aging in qvevri with full must-puppies contact for 206 days.
Serving temperature: 16-18°C. It is recommended to open the bottle 30-60 minutes before serving or decant.
Producer: Sopho's Winery (Sofia and Ivo)
Region: Mukuzani, Kakheti
Color: Very deep, dense ruby-garnet, almost opaque. This is typical of Saperavi, as not only the skin but also the flesh of the berries is colored.
Aroma: Intense and multilayered: ripe blackberries, sweet and dark cherries, black currants, dry black tea, light earthy and spicy notes. As the wine aerates, nuances of leather and dried herbs emerge.
Taste: Black cherry, blackberry, black currant notes, tea and spice notes, moderate minerality, and the vibrant natural acidity of Saperavi are evident. Tannins are pronounced but not harsh. Thanks to the extended contact with the pulp in the qvevri, the wine has a good texture and significant aging potential.
Food pairing: Pairs well with ribeye steak, grilled lamb, beef shashlik, braised meat dishes, game, Georgian lamb chakapuli, and aged hard cheeses.
