Gurashvili Saperavi wine is produced by a small family winery Gurashvili’s Family Vineyards, located in the village of Tibaani, Sighnaghi, in the Kakheti region, the main wine region of Georgia. The vineyards occupy about 12 hectares, only their own berries are used, the harvest is done manually, and priority is given to traditional technologies and manual labor.
The ancient Kakhetian technology is used for production: fermentation and aging take place in qvevri - large clay vessels buried in the ground. The berries, along with the skin and pulp, are macerated for 5 months, which gives the wine a rich color, structure and pronounced tannins. After maceration in qvevri, the wine is aged for about 3 months in steel tanks and the same amount in oak barrels, bottling is carried out without filtration
