The vineyards of ETHNO Wines (also known as Wine Art Ltd.) are located in three historic villages in Kakheti, Georgia: Manavi, Khashmi, and Shilda (a protected designation of origin). The “Shilda” in the vineyard name refers to the location of the vineyard.
Winemaking: ETHNO is known for its commitment to organic winemaking. Their wines, including this Saperavi, are often made using the traditional qvevri method. Qvevri are large clay amphorae buried in the ground. This method is recognized by UNESCO as part of the Intangible Cultural Heritage of Humanity. The grapes are usually hand-picked and fermented with wild yeast.

Food pairing: Pairs well with grilled or oven-baked game, braised lamb and beef. Complements hot sauces and dishes. Pairs well with breaded grilled sweet peppers and Mediterranean-style seasoned tomatoes. Also with earthy dishes such as pkhali with mushrooms and walnuts (traditional Georgian dish). Pairs well with sharp fresh cheeses and aged sheep's cheese, which will balance the tannins and fruitiness of the wine
