The BKK "Classic Eclair" is a traditional Ukrainian choux pastry made by the Kyiv Bakery and Confectionery Factory with a creamy filling, popular among lovers of Eastern European sweets. It's a classic eclair with a delicate pastry crust and a creamy or custard filling, often dusted with powdered sugar.
The main ingredients include boiled whole condensed milk (42.8% - cow's milk), sugar, and lactose), powdered sugar, chicken eggs (melange), premium wheat flour, and drinking water. Additionally: a mixture of vegetable fats (hydrogenated palm kernel oil, emulsifiers E472b, E322, E472e), margarine (vegetable fats, salt, preservative E202), molasses, salt, natural colors (caramel, paprika), vanilla essence, cream mixture with sugar, modified starch, whey, and fat.
BKK (Kyiv BKK) has been producing éclairs since Soviet times as a mass-produced dessert based on the French éclair recipe, adapted for industrial production in Ukraine. The "classic" version with boiled condensed milk or custard became a hit in the 1990s and 2000s.
