The name of the confection is linked to Zephyr, the ancient Greek god of the west wind; according to legend, it was he who "gifted" the recipe for this airy treat to humanity. The modern form of *zephyr* emerged in the 19th century: building upon traditional Russian *pastila*—made from apple purée and sugar—confectioners added egg whites and began using gelling agents (such as agar or pectin) to achieve a stable, airy structure.
The first factory for the industrial production of *zephyr* opened in the early 20th century, after which it became a mass-market confection in the USSR and, subsequently, in post-Soviet countries. Vanilla *zephyr* is the classic variety, featuring a vanilla flavor profile set against the underlying sweetness of the apple-and-sugar base.
