Pastila is a traditional dessert made from fruit purée (most commonly apple), sugar or honey, and whipped egg whites. The first references to such sweets in Rus' date back to the Middle Ages; originally, pastila was denser, resembling a solid sheet of fruit.
Belevskaya (airy) pastila, in its modern form, originated in the 19th century in the town of Belev (Tula Governorate). Local merchants and confectioners began using Antonovka apples—roasting them, whipping the resulting purée with egg whites, and drying the mixture—to create a light, porous texture. By the turn of the 20th century, Belevskaya pastila had gained renown across Russia and was being exported abroad as a quintessential Russian dessert.
Belevskaya "Cherry" Pastila (No Added Sugar) is a natural fruit dessert crafted using a traditional method from roasted apples, cherries, and whipped egg whites. This modern version contains no added sugar.
