Marmalade has a very ancient history: its earliest forms are associated with the Eastern Mediterranean and Ancient Greece, where quince or apple juice was boiled down and used as a medicinal sweet. The word "marmalade" itself comes from the Portuguese "marmelada," a traditional boiled quince product. Through trade, the word reached England, where it later came to refer to a special type of citrus jam.
In the Middle Ages and later in Europe, marmalade gradually evolved from a medicinal fruit puree into a dessert, and with the spread of sugar in the 16th and 17th centuries, recipes became sweeter and more varied. Different traditions took hold in France and Britain: in France, dense fruit sweets, while in England, orange marmalade for toast.
In Tsarist Russia, marmalade was long known as "fruit aspic," and mass production began in the 19th century, thanks in part to the Abrikosov factory. Chewing marmalade in its modern form became especially popular at the end of the 20th century.
