Utskho-suneli is essentially ground seeds of blue fenugreek (Trigonella caerulea). The spice has almost no aroma in its dry form. The true, pronounced aroma of young nuts and fresh herbs is revealed only when heated or when in contact with hot, fatty dishes.
Utskho-suneli is an integral component of many classic Georgian dishes:
- Satsabeli and Bazhe: An indispensable addition to nut-based sauces
 - Khmele-suneli: It is one of the key components of this complex spice blend
 - Meat dishes: Used for rubbing meat (lamb, beef), shish kebabs and lula kebabs
