Cumin (jeera, Roman cumin) is an annual herbaceous plant up to 25 cm high of the Apiaceae family. The spice is dry, grey-brown seeds and greens used in salads. Cumin seeds are often mistaken for cumin. Cumin has a strong, spicy aroma and a burning, bitter-spicy taste. Cumin is widely used in Indian, Middle Eastern, North African and Mexican cuisines. This is a traditional component of national Indian and Central Asian cuisine, especially Indian curry and garam masala. Cumin seeds are added to marinades, sauces, soups and fried meat dishes, porridges and baked goods. This is an indispensable spice for cooking pilaf.
