Korean-Style Beetroot is not a traditional Korean dish, but an appetizer inspired by the cuisine of the Koryo-saram, a group of Koreans living in the former USSR. After the deportation of Koreans from the Far East to Central Asia in 1937, many of the traditional kimchi ingredients, primarily Chinese cabbage and radishes, were difficult to obtain. They were replaced with local vegetables—carrots, beets, and cabbage. This gave rise to a whole group of salads featuring thinly sliced vegetables, garlic, oil, vinegar, and hot spices. The most famous was the Korean-Style carrot salad, while the beetroot version developed later as a regional adaptation.
Therefore, the cooking method—thin slicing, marinade, garlic, and spices—is not the origin of the dish in Korea itself. Beets contain dietary fiber, folate, potassium, manganese, vitamin C, and betalains, a plant pigment. They are also rich in natural nitrates, which can be converted into nitric oxide in the body, helping to relax blood vessels and improve blood flow.
