Its origins are linked to the difficult times of war, particularly the military conflicts with the Persians in the 18th century. At that time, wounded soldiers were unable to eat solid food, so women invented a special dish: a dough flatbread filled with minced meat and a rich broth, making the meal easy to digest and highly nutritious. The meat was chopped with a battle axe, symbolizing the warriors' strength and courage. The shape of the khinkali has deep symbolic meaning: the folded top is associated with mountain peaks, and the rounded base symbolizes the sun, suggesting the likely influence of ancient pagan beliefs on the dish's form and meaning. Khinkali has spread throughout Georgia and is considered a national culinary symbol, accompanied by special traditions for its preparation and consumption.
