Tkemali is a variety of wild plum that grows in the Caucasus mountains and from which the sauce of the same name is made. To prepare it, you can use ripe fruits, then the sauce will be orange or red, or green fruits, then the sauce will turn out green, unsuitable for long-term storage. Mountain plums contain many useful components, primarily vitamin E, a powerful antioxidant that prevents atherosclerosis and the development of cardiovascular diseases. Vitamin C strengthens the immune system, normalizes blood circulation, and together with vitamins B1 and B2, stimulates the functioning of the central nervous system. Nicotinic acid normalizes lipid metabolism, iron restores hemoglobin levels, pectin normalizes the functions of the gastrointestinal tract, stabilizes cholesterol levels in the blood. Tkemali is a low-calorie sauce; it is recommended for those who are losing weight and watching their weight, because it stimulates appetite, digestion and fat metabolism, and at the same time does not overload the body. Tkemali sauce is in perfect harmony with fish and meat dishes, side dishes of pasta, potatoes, and grilled vegetables.
